    We focused on developing an epidemic prevention method for circulating masu salmon aquaculture using the probiotic Lactococcus lactis strain K-C2. This study aimed to evaluate the antibacterial activities of strain K-C2 against pathogens isolated from dead Yamame and masu salmon. First, we identified pathogenic bacteria that were isolated from dead masu salmon based on phylogenetic analysis of the 16S rRNA gene sequence and biological and biochemical characterization. The antibacterial activity of strain K-C2 against seven pathogenic strains isolated from dead masu salmon in this study and two strains of Aeromonas salmonicida previously isolated from dead Yamame was tested using a double agar plate method. The results of a BLAST search using 16S rRNA partial sequence data (1200–1300 bp) revealed that six of the former strains and one of the latter strains showed high similarity to Vibrio anguillarum and Tenacibaculum maritimum, respectively. Strain K-C2 showed antibacterial activity against all pathogenic bacteria. In this study, pathogenic bacteria were newly isolated from dead seawater-acclimated masu salmon, and strain K-C2 was found to have antibacterial effects against these pathogens.

    The internal organs of white sturgeon in Miyazaki Prefecture are discarded during processing. Therefore, we tried to produce fish sauce using a short-term manufacturing method. The minced internal organs were autolyzed by endogenous proteases at 50 °C. During autolysis, the protein contents of the supernatant and precipitate after centrifugation were analyzed by the Kjeldahl method, and the protein size was monitored by SDS-PAGE. This analysis showed that the extraction rate was about 60% after treatment at 50 °C for 24 h. The major bands at 200 kDa, 43 kDa, and 40 kDa detected before the start of the treatment gradually disappeared over time. Fifteen components were detected as the main volatile components. These components increased sharply and then decreased during incubation at 50 °C for 24 h. The fish sauce produced had a good aroma after incubation at 50 °C for 72 h.

    This study aimed to evaluate the ratio of adherence of lactic acid bacteria (LAB) to porous fine ceramics in order to develop a novel LAB-rich pickle container for the production of functional fermented vegetables. Some LAB were isolated from the salted rice bran used for pickling (Nukadoko in Japanese). These isolates were classified in Lactobacillus namurensis by phylogenetic analysis. Some pottery-shard (PS) samples were prepared by varying the mixing rate of polyacetal (POM) resin to clay (0-30% (v/v)) and the burning temperature (1000 °C or 1100 °C). A test of the adherence of strain GYP-74 to the PSs was performed. The results showed that the adherence rate was significantly higher in the PSs burned at 1100 °C as compared with those burned at 1000 °C. A pore distribution analysis showed that pore sizes of less than a few µm and pore sizes in the range of a few µm to a few hundred µm were mainly distributed in the PSs without and with POM, respectively. X-ray diffraction analysis showed that both PSs with and without POM contained quartz and hematite. The PSs burned at 1000 °C and 1100 °C specifically contained microcline and mullite, respectively. This study revealed the basal information regarding what makes PSs adequate for LAB adhesion.

    To examine the effect of cold shock treatment on the fatty acid composition of Aurantiochytrium limacinum strain mh0186, a marine thraustochytrid, we cultivated this strain at 28°C for 72 h with shaking and stored the obtained biomass at 10°C for 72 h. A growth experiment was carried out for comparison, wherein strain mh0186 was grown at 10 and 15°C for 72 h with shaking, and it was found that the unsaturation of fatty acids was accelerated relative to that at 28°C. In the cold shock experiment, the total lipid content signifi cantly increased during storage at 10°C for 72 h. Overall, the percentage of unsaturated fatty acids such as docosahexaenoic acid was almost stable while that of n-6 docosapentaenoic acid decreased slightly, but signifi cantly, relative to that in the growth experiment. © 2011 by Japan Oil Chemists' Society.
