Abstract ###Sugi sapwood containing transition metal salt as an additive was carbonized at 400 ℃ for ###1 h under nitrogen atmosphere. The relationship between the carbonization conditions and the ###chemical structure of the charcoal was investigated. The results were as follows : ###1) Carbon radicals on charcoal surface measured by ESR were decreased by the addition of ###transition metal salts. ###2) Aromatic carbon ratio on charcoal surface measured by XPS was increase by the addition ###of transition metal salts.

Sugi woods treated with acetic acid aqueous solution were found to become lighter in weight. Treated and untreated sugi woods were carbonized at 400°C to afford wood-vinegar, wood-tar and charcoal. Yield of wood-vinegar from the pretreated wood was increased, but yields of wood-tar and charcoal were decreased. Yields of wood-vinegar and wood-tar were almost constant, though yield of charcoal was slightly decreased with the increase of acetic acid aqueous solution concentration. Components in wood-vinegar from the treated and untreated sugi woods were determined by capillary gas chromatography (capillary GC). Amounts of 2-furaldehyde and 5-hydroxymethyl-2-furaldehyde in wood-vinegar from the treated wood were increased, but amounts of carboxylic acids, phenols, pyrocatechol, guaiacols, and maltol were almost constant. Amount of 2-furaldehyde were increased with the increase of acetic acid aqueous solution concentration from 0 to 3%, and almost constant from 3% to 30%.

The contents of 4-Hydroxy-2-nonenal (HNE), cytotoxic aldehyde, in smoked meat products (ham, bacon and sausage) were analyzed. All the samples analyzed contained HNE, although large differences in the contents between the different samples were observed. In one lot of ham (H1) and wiener sausage (WS1) a high level in HNE was observed. The changes of HNE contents of pork meats containing 0, 0.1, 0.5 and 1% Sugi wood vinegar (SWV) stored at 0 °C were also analyzed for 7 days. As an index of lipid peroxidation level, malonaldehyde (MA) contents were also analyzed in these samples. After 7 days of storage, HNE was detected only in pork meats containing 1% SWV and the level was similar to those of HI and WS1. Judging from MA contents, SWV may act as a pro-oxidant in pork meats and HNE may accumulate in pork in which lipid peroxidation is in progress. © 2002 Elsevier Science Ltd. All rights reserved.

Contents of 4-hydroxy-2E-hexenal (HHE), hepatotoxic aldehydes, in smoked fish meat products (smoked salmon and fish meat sausage) were analyzed. Large differences in these contents between the different samples were observed. Very low levels of HHE were detected in fish meat sausage samples. However, a high level of HHE was observed in one batch of smoked salmon. Changes of HHE contents in yellowtail meat containing cherry and sugi wood vinegar stored at 0°C were also analyzed for 7 days. Malonaldehyde (MA) was also analyzed in these samples as an index of the lipid peroxidation level. After 3 or 7 days of storage, HHE contents in both wood vinegar-added samples were significantly higher, but MA contents were significantly lower than those of the control.

スギ(<i>Cryptomeria japonic</i> D. Don)辺材木粉からKlasonリグニン,<i>α</i>-セルロースおよびヘミセルロースをそれぞれ分離した.スギ辺材と分離した構成成分の熱重量分析(TG)と示差熱測定(DTA)を行い,熱分解開始温度が辺材で258 °C,Klasonリグニンで342 °C,<i>α</i>-セルロースで280 °C,ヘミセルロースで153 °Cとなることがわかった.スギ辺材と分離した構成成分を400 °Cで炭化して得られた木酢液を毛管GC分析した結果は,メタノール,ピロカテコールおよびグアイアコール類がリグニンから,シクロテンおよびマルトールがセルロースから,フラン類がセルロースとヘミセルロースから,および酢酸が3種の構成成分から由来することを示唆する.スギ辺材を炭化温度と保持時間を変えて炭化して得られた木酢液の成分組成の分析から,250 °C · 保持6時間でフラン類とマルトールの生成が終結し,300 °Cでピロカテコールやグアイアコール類の生成が活発になることがわかった.この結果は,スギ辺材では,ヘミセルロースやセルロースの熱分解が250 °Cで活発になり,リグニンの熱分解は300 °C付近になってから活発になることを示唆する.

The lipid peroxidation in smoked salmon and two wood vinegars {commercial wood vinegar (VVV) and cherry wood vinegar (CVVV)} treated fish meat was evaluated using malonaldehyde (MA), 4-hydroxy-2E-hexenal (HHE) and carbonyl protein (CP) as indices for a 7-day storage period at 4°C. Smoked salmon samples showed a high variation of MA, and extremely high levels of MA and HHE indicate uneven distribution of smoke constituents and high pro-oxidative activity respectively, making smoking unsuitable. Of the two wood vinegars, CVVV treated fish meat gave high levels of HHE, MA and CP compared with that of the control, demonstrating CVVV as a pro-oxidant. However, in VVV treated samples, the control showed a higher level of MA compared with that of treated samples, whereas the treated samples showed higher levels of HHE and CP compared with that of the control, making it difficult to decide whether VVV suppresses or stimulates the peroxidation. In both wood vinegar treated samples, the variation of indices during storage period does not show a clear pattern in relation to type of wood vinegar used or its concentration. This indicates a complexity of the peroxidative mechanism due to its high dependency on numerous factors. © 2002, The Japanese Society of Fisheries Science. All rights reserved.

Methanol extracts of sugi (Cryptomeria japonica D. Don) wood were separated into toluene-insoluble, hexane-toluene-insoluble, and hexane-toluene-soluble fractions. Ferruginol, sugiol, sandaracopimarinol, sandaracopimarinal, phyllocladanol, and β-sitosterol were obtained from the hexane-toluene-soluble fraction by column chromatography on silica gel. The inhibitory activity of each terpenoid on mycelial growth of shiitake (Lentinula edodes (Berk.) Pegler) was examined on a potato dextrose and agar medium at 25°C. Ferruginol, sugiol, and sandaracopimarinol were found to inhibit the mycelial growth of shiitake at a concentration of 5000 μg cm-3. The 50% inhibition concentration of ferruginol was determined at ca. 100 μg cm-3and that of sandaracopimarinol at ca. 1000 μg cm-3. The mycelial growth inhibition of shiitake is probably due to a synergistic effect of ferruginol and sandaracopimarinol, which are the major terpenoids in sugi wood.

脂質過酸化由来アルデヒド, 4-ヒドロキシヘキセナール (HHE) のV79及びA31細胞に対する毒性を調べるとともに, -20℃貯蔵ブリ筋肉中の変動を調べた. V79及びA31細胞に対する50%増殖阻害濃度はそれぞれ, 3及び16μmol/Lであった. 用いた細胞毒性測定法の感度を考慮すると, より低濃度でHHEは細胞毒性を示すと考えられる. -20℃28週貯蔵ブリ筋肉中HHE含量は60.82±4.39μmol/kg筋肉にまで上昇した. -20℃貯蔵中にHHE含量が増加することは, 食品衛生上問題であり, 種々の条件下でのHHEの変動について詳細な検討が必要と思われる.

The material balance of carbonization products (wood-gas, wood-vinegar, wood-tar and charcoal) prepared from the sapwood and the heartwood of Sugi (Cryptomerica japonica D. Don) at various temperatures was determined. The evolution of both carbon monoxide and carbon dioxide mainly occurred at the carbonization temperature below 600 °C and that of hydrogen and methane at 600-800 °C. Total yield of the wood-vinegar and the wood-tar was almost constant at 500-800 °C. On the other hand, the yield of the charcoal decreased because of the evolution of the wood gas with an increase in carbonization temperature. The wood-vinegars prepared at the temperature over 400 °C were found to consist of carboxylic acids such as acetic acid and propionic acid, methanol, acetone, furans, alkylphenols, guaiacols, cyclotene and maltol by capillary gas chromatography. Since the constituent varieties and contents of the wood-vinegars prepared at both 400 °C and 800 °C were very similar each other, the wood-vinegar of Sugi wood chiefly produced below 400 °C. FT-IR spectra of the charcoals showed the generation of carbonyl and olefin groups at 300-400 °C and then the formation of aromatic rings along with the disappearance of carbonyl groups over 600 °C. The production of radical species in the charcoals carbonized at 300-600 °C was observed by ESR, on the contrary, the charcoals carbonized over 700 °C were inactive. The specific surface area and the pore volume of the charcoal of Sugi sapwood increased with an increase in carbonization temperature. The pH of charcoal-dispersed aqueous solution increased with an increase in carbonization temperature. The high adsorptive activity of the charcoal carbonized at 400 °C for ammonia gas and that at 800 °C for hydrogen sulfide gas seemed to be dependent on acidic and basic properties of the charcoals, respective-ly.
